Hi Folks:

Though these are not all Scottish recipes, I thought you might enjoy using them during the two big holidays coming up, I will add a few more as time allows, heading into the holidays. I hope you enjoy them.


VEGETARIAN SHEPARD'S PIE

1 1/2 cups hot water
1/2 cup milk
2 tablespoons butter or margarine
1/2 package Betty Crocker® four cheese mashed potatoes
3 cups frozen vegetables, any variety, thawed and drained
1 can (11 ounces) condensed Cheddar cheese or cream of mushroom soup
1 can (4 ounces) sliced mushrooms, drained
1 can (2.8 ounces) French-fried onions

Total Time: 45 min
MORE OPTIONS: 1 2
1. Heat oven to 350ºF. Heat hot water, milk and butter to a rapid boil in 2-quart saucepan. Remove from heat. Stir in 1 pouch Potatoes and 1 pouch Seasoning just until moistened. Let stand about 1 minute or until liquid is absorbed. Whip with fork until smooth; set aside.
2. Stir remaining ingredients except onions in large bowl. Pour vegetable mixture into ungreased 1 1/2-quart casserole; sprinkle with half of the onions. Spread potatoes over onions.
3. Bake uncovered 25 minutes; sprinkle with remaining onions. Bake 3 to 5 minutes longer or until mixture is hot and onions are brown.

ITALIAN SHEPARD'S PIE

1 lb boneless beef sirloin, trimmed of fat, cut into 1-inch cubes
1 cup sliced onion (about 1 medium)
2 medium carrots, sliced (1 cup)
1/2 teaspoon seasoned salt
1/4 teaspoon pepper
1 1/2 cups sliced fresh mushrooms
1 jar (14 oz) tomato pasta sauce (any variety) (1 1/2 cups)
1/2 box (7.2-oz size) Betty Crocker® roasted garlic mashed potatoes (1 pouch)
3/4 cup hot water
1 1/4 cups milk
2 tablespoons butter or margarine
2 tablespoons shredded fresh Parmesan cheese

1. Heat oven to 375°F. Spray 2-quart casserole or 11x7-inch glass baking dish with cooking spray. Heat 12-inch nonstick skillet over medium-high heat. Add beef, onion and carrots to skillet; sprinkle with seasoned salt and pepper. Cook 3 to 5 minutes, stirring frequently, until beef is brown.
2. Stir in mushrooms and pasta sauce. Heat to boiling. Cook over medium heat 5 minutes, stirring occasionally. Spread in casserole.
3. Make potatoes as directed on box for 4 servings, using 1 pouch Potatoes with Seasoning, hot water, milk and butter. Spoon into 8 mounds around edge of hot beef mixture. Sprinkle cheese over all.
4. Bake uncovered 25 to 30 minutes or until bubbly and potatoes

MY EASY RECIPE FOR SHEPARD'S PIE

To make the shepards pie a low fat recipe use wesson oil instead of butter to brown the hamburger & onions (i forgot to say drain the hamburger and oinions when done cooking) and use Molly McButter in the potatoes. Use the 90% lean hamburger or you can use ground turkey

1-1/2 lbs 85% lean (or 90%) ground beef
2 cans cream style corn
6 large potatos
1 large onion
1 tsp onion powder
1 tablespoon butter
4 tablespoons of butter
1/4 tsp pepper
1/2 tsp salt
1/2 cup milk
1/2 tsp Paprika (optional)

Preheat oven to 350
Chop Onion. In large skillet melt 1 tablespoon of butter, add ground and scramble. Add onion to hamburger and cook until onions are clear. Season with 1 tsp onion powder. (add salt & pepper optional)
Peel and boil potatoes. Drain potatoes add milk and 4 tablespoons of butter use electric mixer and whip. Add additional milk if necessary. in a 13 x 9 baking dish spread hamburg mixture in bottom of pan. Spread cream corn evenly over hamburg mixture. Top with mashed potatoes. Sprinkle paprika over mashed potatoes.

Bake 30 minutes

GRANDMA THOMPSON'S LEMON MERANGUE PIE

Mix in saucepan: 5 1/3 tbsp. cornstarch 1 1/2 c. water, stir in gradually
Cook over moderate heat, stirring constantly, until mixture thickens and boils. Boil 1 minute, slowly stir half of the hot mixture into 3 egg yolks (slightly beaten), then stir in rest of mixture and boil 1 minute longer, stirring constantly. Remove from heat and blend in 3 tablespoons butter, 4 tablespoons lemon juice, and 1 1/3 tablespoons grated lemon rind. Pour into baked pie shell. Bake at 450 degrees for 12 minutes.

Meringue:

Beat 3 egg whites and 1/4 teaspoon cream of tartar until it peaks, then gradually add 6 tablespoons of sugar. Spread on pie and bake at 350 degrees for 15 minutes.

NEW ENGLAND SQUASH PIE

This is my ABSOLUTE favorite holiday pie. Like it better than pumpkin....Though you can substitute pumpkin in place of the squash if you wish.

1 c. brown sugar
1 tbsp. flour
1/2 tsp. salt
1/8 tsp. cloves
1/8 tsp. nutmeg
1/8 tsp. allspice
1/8 tsp. ginger
1/4 tsp. cinnamon
1 1/2 c. cooked squash or pumpkin
1 egg, beaten
1 1/2 c. milk, scalded
1 unbaked pie shell

Combine sugar, flour, salt, spices and squash. Mix thoroughly. Add egg and milk; cool; pour in pie shell. Bake 30 to 40 minutes at 450 degrees or until knife inserted in filling comes out clean.

SQUASH (OR PUMPKIN) CHIFFON PIE

Here's the recipe for the perfect pie shell.
(Makes two 9 inch double pie crusts and one pie shell or 20 tarts.) Mix well:

4 c. unsifted flour (1/2 wheat, 1/2 white)
1/2 tbsp. honey
2 tsp. salt

1 3/4 c. butter or shortening at room temperature

1/2 c. cold water
1 tbsp. white or cider vinegar
1 lg. egg

Stir until all ingredients are moistened. Divide dough in 5 portions - shape each in flat round patty. Wrap each in plastic or waxed paper and chill at least 1/2 hour. When ready to roll, lightly flour both sides of patty.

FILLING:
3 eggs, separated
1/2 c. honey
1/2 tsp. salt
1/2 tsp. nutmeg
1/2 tsp. cinnamon
1/2 tsp. ginger
1/2 c. milk
1 1/2 c. cooked squash or pumpkin
1 env. gelatin
1/4 c. cold water

Beat egg yolks slightly, add 1/4 cup honey, squash, milk, salt and spices. Cook until thick. Pour cold water over gelatin and add to squash mixture and cool. Add remaining honey and stiffly beaten egg whites. Fill pie shell and chill.

CAKE WITH LEMON FILLING

FOR THE CAKE USE THE FOLLOWING RECIPE


1 c. butter
2 c. sugar
3 c. cake flour, sifted
4 eggs
1 c. milk
3 tsp. baking powder
1/2 tsp. salt
1 tsp. vanilla flavoring

Cream butter and sugar until light and fluffy. Reduce mixer speed and add eggs, one at a time. Sift together dry ingredients and add to mixer alternately with milk. Add vanilla and continue to mix until smooth. Pour into three 8 inch layer pans. Bake 25-30 minutes at 350 degrees. Turn out onto cooling racks and cool thoroughly before icing with lemon filling.

FILLING:
2 1/4 c. sugar
6 heaping tbsp. cornstarch
Dash of salt
3 slightly beaten egg yolks
2 1/4 c. water
9 tbsp. lemon juice
3 tsp. grated lemon peel
3 tbsp. butter

Mix sugar, cornstarch and salt; add egg yolk, water and lemon juice. Cook over low heat until thick, stirring constantly. Remove from heat and add lemon peel and butter. Cool before spreading between layers and on top of cake.

Here's a great recipe for Apple Brownies. Enjoy!

2 cups sugar
2 cups of flour
1 tsp. baking powder
1tsp. baking soda
1/2 tsp salt
3 tsp cinnamon
1 cup of non fat plain yogurt
4 medium apples
1 cup of walnuts Crushed

TOPPING
1/4 cup brown sugar
1/4 cup walnuts
1 tsp cinnamon

DIRECTIONS
In a large bowl, mix all dry ingredients
Add yogurt and apples and mix it all together until moist
Pour into a greased 9 x 13 pan
Cover with topping
Bake 50 minutes at 350 degree oven

THIS IS GREAT TOPPED WITH A BIG SCOOP OF ICE CREAM.

Ever wonder what to do with that left over turkey?

Here's a great recipe for you.

TURKEY TETRAZINI

INGREDIENTS
8 oz. uncooked spaghetti
1/4 cup margarine or butter
2 cups sliced fresh mushrooms
3 tablespoons all-purpose flour
2 cups chicken broth
3/4 cup half-and-half
1 to 3 tablespoons dry sherry, if desired
1/4 cup chopped fresh parsley
1 teaspoon salt
1/8 teaspoon nutmeg
Dash pepper
3 cups cubed cooked turkey
1/2 cup grated Parmesan cheese
Chopped fresh parsley, if desired

DIRECTIONS
1. Cook spaghetti as directed on package. Drain.
2. Meanwhile, melt margarine in Dutch oven over medium heat. Add mushrooms; cook 5 minutes or until tender, stirring frequently. Reduce heat to medium-low. Add flour; cook and stir until bubbly. Gradually add broth, stirring constantly, until mixture boils and thickens. Remove from heat; stir in half-and-half, sherry, 1/4 cup parsley, salt, nutmeg and pepper.
3. Add cooked spaghetti and turkey to mushroom mixture; stir gently to mix. Spoon mixture into ungreased 13x9-inch (3-quart) glass baking dish. Cover with foil; refrigerate at least 8 hours or overnight.
4. Heat oven to 350°F. Uncover baking dish; sprinkle Parmesan cheese over top. Cover; bake at 350°F. for 45 to 55 minutes or until thoroughly heated, removing foil during last 10 minutes of baking time. Sprinkle with parsley.
High Altitude (3500-6500 ft): Increase chicken broth to 2 1/2 cups. Bake at 350°F. for 50 to 60 minutes, removing foil during last 10 minutes of baking time.

This is a favorite of mine. It tases great. Try it and enjoy.
